Little House Big Alaska's Homemade Spicy Hot Pepperoni

It’s a variation of the Little House Big Alaska's Easy Homemade Ground Beef Pepperoni, just worked over a bit for more heat.

If desired, you can use Morton's Tender Quick curing salt which will make the meats pink.

Ingredients

  • 2 teaspoons ground black pepper

  • 2 teaspoons fennel seeds

  • 1 teaspoon dried red pepper

  • 2 teaspoons mustard seed

  • 1 teaspoon garlic powder

  • 1 teaspoon jalapeno powder

  • 1 teaspoon chipotle powder

  • 1 teaspoon cayenne powder

  • 1 teapsoons smoked salt

  • 2 pounds very lean beef

  • 2½ teaspoons liquid smoke

  • 2 teaspoons honey

Directions

  • ground the black pepper, fennel seeds, and dried red pepper together in a mortar and pestle

  • mix all the dry spices together in a bowl and set aside leaving out any spices you dont care for

  • break up the ground beef in a mixing bowl

  • sprinkle the dry spices over meat and mix very well

  • add liquid smoke and honey, mix well

  • cover tightly and refrigerate 48-72 hours

  • extrude onto tray with tube-shaped extruder on jerky gun

  • dehydrate for 8 hours
