Three Minute Mayonnaise
Ingredients
1 cup avocado or olive oil
1 large egg
1 teaspoon lemon juice
1/2 teaspoon dijon mustard
1/4 teaspoon salt, or more to taste
pint wide-mouth mason jar
hand immerson blender
Directions
In a pint sized wide mouth mason jar, add the ingredients
Insert the immersion blender all the way to the bottom
Turn on high, 20-30 seconds, or until white
Very slowly lift immersion blender to continue emulsifying
Continue blending until mixture has thickened to your desired amount
Add more salt or lemon juice to taste, if preferred
Keep covered in fridge, will last 4 weeks
