Three Minute Mayonnaise

Ingredients

  • 1 cup avocado or olive oil

  • 1 large egg

  • 1 teaspoon lemon juice

  • 1/2 teaspoon dijon mustard

  • 1/4 teaspoon salt, or more to taste

  • pint wide-mouth mason jar

  • hand immerson blender

Directions

  • In a pint sized wide mouth mason jar, add the ingredients

  • Insert the immersion blender all the way to the bottom

  • Turn on high, 20-30 seconds, or until white

  • Very slowly lift immersion blender to continue emulsifying

  • Continue blending until mixture has thickened to your desired amount

  • Add more salt or lemon juice to taste, if preferred

  • Keep covered in fridge, will last 4 weeks
